Rustic Maple Tahini Granola

This granola is my new all-time favorite. It's nutty and earthy, has the perfect amount of sweetness, and is a perfect topping for just about anything (or as a snack in itself!)

Ingredients
  • 2 cups rolled oats
  • ½ cup sliced almonds
  • ½ cup unsweetened coconut flakes
  • ¼ cup pumpkin seeds
  • ¼ teaspoon cinnamon
  • pinch of sea salt
  • ⅓ cup maple syrup
  • 3 tablespoons tahini
  • 2 tablespoons coconut oil
  • Add-in after baking: ½ cup golden raisins
Instructions
  1. Preheat oven to 250 F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, almonds, coconut flakes, pumpkin seeds, cinnamon, and salt.
  3. In a small bowl, whisk together the maple syrup, tahini, and melted coconut oil. Pour over oat mixture and mix well.
  4. Pour granola onto a parchment paper-lined baking sheet. Lightly flatten with the back of a large spoon or a spatula into an even layer.
  5. Bake until golden, about 40-45 minutes. Lightly stir halfway through (and make sure to flatten out again).
  6. Remove from the oven and let totally cool. Break apart larger chunks and mix in raisins. Store in an air-tight container.
Notes
I use a total of ¾ cup sliced almonds and pumpkin seeds. If you have something else you'd rather use, simply swap out and use ¾ cup of whatever you prefer or have on hand.
